Total time: 3 hours (mostly chilling)
Yield: Depends on how you cut them
340 gram peanut butter
2,25 (1 cup) powdered sugar
1 tablespoon vanilla sugar
100 gram softened butter
1 tablespoon heavy cream (optional)
1 dl (1/2 cup) chopped salty peanuts
600 gram dark chocolate (55 %)
Prepare your medium pan with parchment paper (baking paper). Put it aside.
Chop dark chocolate (300 gram), put it in a bowl and melt it gently in a water bath. Remove the bowl from the heat. Pour the melted chocolate in your prepared pan. Refrigerate for 20-30 minutes or until harden.
Meanwhile, prepare the peanut butter cream. Use an electric whisk to beat the peanut butter, powdered sugar, vanilla sugar and butter until light and fluffy. Add the chopped peanuts and do not overbeat the batter, whisk gently.
Spoon the peanut butter mixture over the chocolate layer into a smooth layer. Refrigerate for 30 minutes.
Chop the remaining dark chocolate (300 gram) , put it in a bowl and melt it gently in a water bath. Remove the bowl from the heat. Pour the melted chocolate over the peanut butter layer. Refrigerate for a couple of hours or until set (the longer the bars set, the firmer they get). Cut into whatever size bars you prefer.
