200 gram strawberries, diced
1 pineapple, peeled, cored, and chopped
1 lemon zest and lemon juice
1,1 dl (1/2 cup) fresh cilantro or parsley, chopped
1 red chilli jalapeño pepper, seeded and minced (optional)
1 tablespoon honey
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
Combine all ingredients in a large bowl. Stir until well combined. Taste and adjust seasoning as needed. Cover with plastic wrap and refrigerate at least 1 hour.
- Chill for an hour before serving does help develop the flavours.
- Eat with grilled meat, chicken or salmon.
- Instead of pineapple, add mango or papaya. Or instead of strawberries add mango and pineapple.
- For more taste: add red onion or baby leeks (optional).
