Cook time: 10-12 minutes
Total time: 40 minutes
Yield: 30 cookies
400 gram raw almonds
3 dl powdered sugar/icing sugar
5 egg yolks
2 tablespoons melted butter
1/2 teaspoon salt
1 teaspoon vanilla sugar
2 teaspoons baking powder
3 tablespoons Orange Blossom Water
Remove the skin from the almonds, cover almonds in boiling water and soak for 10 to 15 minutes. Drain and remove skin using your fingers. Allow the almonds to dry completely by letting them sit on a paper towel for few hours or over night.
Mix the almonds and powdered sugar in a blender until you get a thick paste. In a bowl, put the almond mixture, salt, vanilla and melted butter. Combine the dough well with your hands. Add the eggs yolks, one at a time and mixing well with your hands. Add baking powder and mix for another 1-2 minutes.
Use orange-blossom water to wet hands, roll into balls and and roll in powdered sugar/icing sugar before placing in a baking sheet. Bake them in the oven for about 12-15 minutes. The cookies should not turn brown. They should still stay in a pale color. Let the cookies cool slightly and then move them over to a rack to cool completely.
