300 gram digestive biscuits
150 gram butter
600 gram philadelphia cream cheese
1.5 dl sour cream
2 dl sugar
1 teaspoon cornstarch
2 teaspoon vanilla sugar or vanilla extract
1 lemon juice and lemon zest
Preheat the oven 175 degrees °C or 350 degrees F.
Crush the digestive biscuits in a food processor or put the biscuits into a food bag, crush into crumbs with a rolling pin. Tip into a bowl with the melted butter and mix well. Tip the mixture into a 20 cm spring form cake tin. Push the biscuits into an even layer into the base of the cake tin. Bake it for 7-8 minutes. Remove from the oven and let the crust cool.
Take another bowl use an electric whisk to beat the philadelphia cream cheese, sour-cream, sugar, and cornstarch until light and fluffy. Add the eggs, one at a time, beating for one minute after each addition. Continue by adding the vanilla sugar, lemon zest and lemon juice. Do not overbeat the batter, whisk gently.
Pour filling into prepared crust. Bake for 1 hour. Cool completely at room temperature for at least 1 hour. Put the cheesecake into the fridge for 8 hours or overnight. Pure the strawberry jam over the cheesecake. Decorate the cheesecake with strawberries.

200 gram strawberries, cut the strawberries in half.
1 dl sugar
Half lemon juice and lemon zest
1 teaspoon cornstarch
1 vanilla bean, split lengthwise and seeds scraped
Place strawberry, sugar,lemon juice, lemon zest and and vanilla bean and scraped seeds in a small saucepan. Stir over medium heat until the sugar is dissolved. Add cornstarch and stir for another 5 minutes or until the sauce begins to thicken. Remove from the heat and remove the vanilla bean. Let it cool, it will continue to thicken.
Baking tips for cheesecake:
- Make the cheesecake a day ahead because it always tastes better the next day.
- Don't use cold butter, eggs, philadelphia cream cheese and sour cream. The temperature of your ingredients is very important in baking. Let the ingredients stand at room temperature for 30 minutes before baking.
- Many cheesecakes crack on the top but please don't worry. Just add the jam and fruit on top. It's home-made. Be proud of yourself and trust me, it will still taste better than store bought cheesecake.
- Decorate your cheesecake with different types of berries: blueberry, raspberry, blackberry. You can even make raspberry or cherry jam.
