Cook time: 10-15 minutes
Total time: 35 minutes
400-500 gram scampi shrimps
2 onion, trimmed and thinly sliced
3 scallions, trimmed and thinly sliced
4 big fresh mushrooms, sliced
1-2 tomatoes, chopped
2-3 chopped red chili (depends on how spicy you want, add more)
4-6 garlic, minced
5 tablespoons of extra virgin olive oil
1 large lemon juice
100 ml coconut cream or coconut milk
100 gram tomato paste
1 tablespoon red curry paste
1 tablespoon green curry paste
Seasoning (salt, chili powder, black pepper)
Handful fresh parsley
Put all the ingredients in a bowl. Make sure its is well marinated. Cover with plastic wrap and refrigerate for a couple of hours.
Heat a grill pan. Add little bit olive oil. When the grill pan is hot, place the marinated scrimp on the grill and cook until the scrimp is cooked through.
Serve with rice, couscous, bulgur, mashed sweet potato. It's up to you!
