300 gram sweet corn
3 scallions, trimmed and thinly sliced
Handful fresh chopped cilantro
2-3 chopped red chili
A handful of grated cheese
1 tablespoon salt
Seasoning (chili powder, black pepper, garlic)
1, 5 deciliter milk (3%)
3 tablespoon olive oil
2 deciliter flour
2 teaspoon baking powder
In a large mixing bowl put: sweet corn, scallions, cilantro, chili, salt, seasoning.
In a separate bowl whisk the ingredients: milk, olive oil, egg, flour and baking powder. Mix until you get a wet mixture.
Combine the two ingredients and gently whisk with a spatula for about 2 minutes. Let it rest for 10 minutes.
Heat a non-stick frying pan over medium high heat and add about 1 teaspoon butter. Pour two or three fritters (using approximately 1 deciliter for each fritter). Cook for about two minutes each side or until golden. Repeat with remaining batter, remember to brush the pan with butter between batches.
Serve the sweetcorn fritters with salsa or home-made sweet chili yogurt.
